The Best Soup Recipe (Using Mad Dash Mixes)
Have you ever gone down a rabbit hole in your brain? Well I definitely had one of those moments when deciding what to have for dinner. Here’s a funny story on how I ended up having tomato basil soup for dinner and a glimpse of how my brain works! I’m hoping I’m not alone.
I came home with a couple of mixes that I couldn’t wait to try. A few weeks ago, I received a few more mixes in the mail with a sweet letter and a discount code for the wonderful women who read my blog. The discount code was AMYSANDLER with an N.
And so it began… my mind that is.
I thought to myself hmmmm Sandler, that’s funny, like Adam Sandler. What if I was married to Adam Sandler? Wait, could I even be married to Adam Sandler? What’s my favorite Adam Sandler movie? I love him in 50 FIRST dates. I wonder what drew Barrymore is doing? Oh, I heard she had kitchen appliances at Walmart. I proceed to google Drew Barrymore kitchen appliances then a few Pioneer Woman kitchen gadgets came up in my search. This reminded me of when my friend Melanie and I went to the Pioneer Woman Store in Oklahoma.
I bought this cute green shirt that I have yet to wear so I went to my closet to find it. I found it and I tried it on. Guess What? It’s too small! So, of course, the next thought is that I really need to start a diet. By the way, the food we had at the Pioneer Woman Restaurant was amazing. That chicken salad – yum!
BACK DOWN THE RABBIT HOLE I GO…
What should I make for dinner? What do I need from the store? I wonder if Walmart has any new sweatshirts? Wonder if they have pajamas? I need to go through my closet. When is the citywide garage sale? Should I just get rid of everything in my closet? Remember that time you went down to 50 total items in your closet? That was great. Should I just wear light gray and black this winter? Or maybe just black? Do you remember not very long ago when you were getting ready for football season and football games? I miss my boys so much! You really should go on a diet. What are you gonna make for dinner?

I could go on because the rest of my day went pretty much just like that as it does almost every day.

So, to get to the point. I ended up making the most delicious Creamy Tomato Basil Soup and “gourmet” grilled cheese! So good and it took 10 minutes! Easy Clean up and everyone loved it!

Not to mention, look how gorgeous it turned out! The DIY patina pumpkin highlighted this meal perfectly.
The only change I made was to substitute one large can of tomato sauce for the tomato paste it calls for and it was perfect!
The grilled cheese is provolone, mozzarella, and smokehouse cheddar (all Sargento) with fresh cut basil on sourdough bread. It was a huge hit!
