Beef Bourguignon Instant Pot
Beef Bourguignon? In the Instant Pot? Don’t mind if I do! I had to learn how to spell it, and I had to clean my kitchen twice to make it, but I’m not even mad about it. I thought I should clean my kitchen really well to prepare such an elegant meal, but in the end, I just had to clean it twice! LOL
This Beef Bourguignon Instant Pot recipe reminds me of something that Anne Boleyn would have ordered for the King when she knew she was in trouble. Like, hey honey, I love you, don’t be mad. It’s that good.
I had heard of Beef Bourguignon, but I assumed it was fancy and expensive. Not to mention, probably difficult to make. It wasn’t cheap like ramen, but it was cheaper than my family eating out at our favorite steak house. Also, a plus is that I didn’t need to make sides as it is a one (instant) pot meal.
Without further ado, here it is.
Beef Bourguignon Instant Pot recipe
Ingredients
- 1 lb of Maple Cracked Pepper Thick cut bacon
- 2 lb of Top Sirloin Steak (you can use boneless beef chuck cut into cubes also)
- 1 Cup red cooking wine (Cabernet Souvignon)
- 2 Cups chicken broth
- 1/2 cup tomato sauce
- 1/4 Cup soy sauce
- 1/4 Cup flour
- 3 Garlic cloves
- 2 tblsp Thyme finely chopped
- 5 medium carrots ( I used baby carrots to save time)
- 1 lb baby red potatoes (you can use your favorite potato variety)
How to make this Beef Bourguignon instant pot recipe
- Crisp Bacon
In a large skillet, cook bacon over medium-high heat until crisp but not burnt. Add bacon to your instant pot.
- Season and Sear Steak
Salt and pepper your sirloin and add it to the hot bacon grease in your large skillet. Sear on both sides for 3 or 4 minutes on each side.
- Cut Steak + Add to Instant Pot
Transfer from skillet to cutting board and cut into cubes. You can cube it first but I don’t like to touch raw meat that much. Transfer sirloin to your instant pot with the bacon.
- Add Garlic
Add garlic to the Instant Pot with your steak and bacon. This is my favorite garlic from the freezer section.
- Simmer and Reduce Wine
Add red wine to your skillet and scrape the bits on the sides to incorporate them into your wine. Allow it to simmer and reduce for a few minutes.
- Add Broth and Soy Sauce
Slowly add in your chicken broth and soy sauce. The burner cover missing because I was cleaning my oven right before this!
- Add Tomato Sauce
Now, add in your tomato sauce.
- Whisk in Flour
Slowly whisk in your flour.
- Adding Sauce to Instant Pot
Add sauce to the Instant Pot.
- Add Thyme, Carrots, and Potatoes
Now it’s time to your thyme, carrots, and potatoes.
- Stir and Let the Stewing Begin
Stir all your ingredients. Close the lid to your instant pot and set it to a stew setting.
When your Beef Bourguignon is done, transfer it to a beautiful serving bowl and enjoy!

I usually use a much more involved method which includes candying mushrooms baby onions and baby carrots, and using a whole bottle of Pinot Noir, but only a tablespoon of tomato paste. I don’t put in potatoes, but have a side of rich scalloped potatoes. I have used the insta pot for this recipe though, instead of the much longer oven cooking, in a ceramic, covered casserole pot. Modern technology is very helpful at times.
