I don’t know about you, but I love it when the weather changes, and I have a simmering pot on the stove with my favorite natural smells simmering and filling my house with vanilla and lemon and rosemary or cinnamon and cloves when it gets colder!
It’s just so homey and cozy. They remind me of my mom too. That might be why I love it so much!

In all of the recipes that call for Vanilla, I am planning on using my own vanilla, but not for a few months because I just made it and it takes a little time to get strong enough, but I am so happy I made it!

The most famous simmer pot recipe (in my opinion) is this one from Williams Sonoma. It’s definitely one of my favorites because it’s cheap and all-natural and my house smells like a Williams Sonoma store. It’s amazing.
Ingredients
- 3 sprigs rosemary
- 1 lemon, cut into slices
- 1 tsp. vanilla extract
- 1 tsp. black peppercorns
- 8 cups water
Another good Williams Sonoma Recipe
- 1 orange, cut into slices
- ½ cup fresh cranberries
- 2 Cinnamon sticks
- ½ cup mulling spices
- Sprig of Rosemary or a cut from your holiday tree
- 8 cups water
My mom would throw this together in the month of December and I remember it to this day. How it made me feel so excited for Christmas and the tree and the lights! Wonderful memories! Priceless actually.
Instructions for simmering potpourri
In a Dutch oven, combine the ingredients. Cover with water and bring to a simmer over low heat. Continue to simmer, uncovered, for up to 2 hours.

Ingredients for Wendy’s Simmering Potpurri
- 3 cups water
- 1 apple sliced
- 1 orange sliced (peel on)
- Fresh, frozen or dried
- 1 half cup of fresh, frozen or dried cranberries
- 3 cinnamon sticks
- 1 Tbsp whole cloves
- 1 tbsp whole allspice
- 1 whole star anise
Instructions for simmering potpourri
Fill a crock pot half full of water. Place all other ingredients inside and mix well. Cover and cook for 2 hours on high heat.
Remove cover and turn heat to low setting and cook for up to 8 hours Stir occasionally throughout the day.
